Background of Ireland
As of 2011, the President of Ireland is Michael D. Higgins. In terms of agriculture, Ireland exports goods such as turnips, barley, potatoes, sugar beets, wheat, dairy, and beef. They also export machinery and equipment, computers, chemicals, pharmaceuticals; live animals, and animal products. With geography, Ireland is situated in the Atlantic Ocean and separated from Great Britain by the Irish Sea. Half the size of Arkansas, it occupies the entire island except for the six counties that make up Northern Ireland. Ireland resembles a basin—a central plain rimmed with mountains, except in the Dublin region. The mountains are low, with the highest peak, Carrantuohill in County Kerry, rising to 3,415 feet. Ireland is also home to many castles such as the one below from Dublin.
I really like how you give the background of the cultures you make the food from. Naturally I would enjoy reading them, considering we have related blogs, but I like that it gives you more background on what culture the food we're eating is from. A suggestion that I have would be, in addition to the culture background, write about when the food you're making first originated in that country/culture. It'd be interesting to know how old some of these dishes are.

Everything you bring in is so good, and the fact that you give so much research in what country you are being inspired by, makes it so easy to see you care a lot of your topic. For Genius Fair, I would recommend you being in bite sized pieces of some of the food you got the best feedback from, from multiple countries. Print out small copies of the recipes you used on paper so if anyone is inspired to make something, they can easily do it. On a poster board you can have pictures of everything you made, countries you learnt about, and how this has helped you.
